Oven Roasted Potatoes
An elegant twist on plain old baked potatoes!
Ingredients
- 8 medium new red potatoes
- 1/2 cup Tastealotta Garlic Olive Oil
- 2 Tsp . kosher salt
- freshly ground pepper to taste
- 1 cup grated melting cheese of your choice optional
- 1 Tbsp . freshly chopped chives for garnish
Instructions

Preheat oven to 400 degrees.

Line a baking sheet with aluminum foil.

Set each potato on a large serving spoon and make thin slices across the width of the potato making sure that you do not cut entirely through the potato.

Pour the Tastealotta Garlic Olive Oil into a large bowl. Add the potatoes to the bowl and toss liberally to ensure that the oil gets between the slices.

Arrange the potatoes on the baking sheet, cut side up.

Sprinkle with salt and pepper - be sure to season between the slices.

Bake for 30 minutes until the edges begin to turn golden brown.

If desired, remove the potatoes, sprinkle with cheese and bake for another 15-20 minutes until fork tender and golden brown.

Adjust seasoning to taste, top with chopped chives and serve with sour cream.
