Marinated Corn Salad
A tasty way to enjoy one of summer's favorite veggies!
Ingredients
- 2 Tbsp . minced red pepper
- 2 Tbsp . minced red onion
- chopped flat leaf parsley and chives
- 4 – 5 ears of corn
- 2 Tbsp . Tastealotta Chipotle Extra Virgin Olive Oil
- 2 Tbsp . Tastealotta Sicilian Lemon Balsamic Vinegar
Instructions

Cook corn till just tender.

Cut the corn off the cob.

Mix with minced red pepper, minced red onion, chopped flat leaf parsley and chives.

Whisk together the Tastealotta Chipotle Extra Virgin Olive Oil and Tastealotta Sicilian Lemon Balsamic Vinegar.

Pour vinaigrette over mixed veggies and toss gently until mixed thoroughly .
